Becoming a vegetarian isn’t just about taste buds or animal rights because eating red meat also has environmental repercussions.  According to the United Nations Food and Agricultural Organization, meat accounts for about 18% of greenhouse gas emissions (due to belching from cows, which emits methane), compared to about 13% caused by transportation.  In response, vegetarians like Paul McCartney’s fashion designer daughter Stella are encouraging meat-eaters to skip meat just one day a week, through a program called Meat-Free Mondays.  The idea is simple: If you stick to veggies just one day a week, it’ll have a positive impact on the environment, not to mention your health.
